BFast-ing with the Laudicos

Since the Ayala Triangle Garden food craze started, Chef Laudico's BFast has been there serving hungry employees of the Makati Central Business District with wonderfully made Filipino foods that are sure to hit the right spot in your heart and tummy. An all-day breakfast diner, BFast's is now happily serving lunch, merienda and dinner buffets that are the nirvana of Filipino dishes in this part of town.


Know from their awesome conceptualization of Filipino food and love to the locally produce ingredients, this husband-and-wife team, Chef Roland and Chef Jaqueline made sure that every visit here in their version of contemporary Filipino diner is as new as ever with their changing buffet offerings every single day.

And last week, just before I go to work, I was happily invited to dine in in this lovely couple's restaurant to talk about the amazing offerings here in BFast as we all as how the two chefs prepare their organic dishes every single day.


Naturally, BFAST has an array of very Filipino breakfast fare in the form of their “Silogs”.  These meals are composed of garlic rice, an organic egg, some salsa, plus one’s choice of viand: tapa, bacon, ham, corned beef, or fish tocino.  However, Chefs Lau and Jackie recognized the need to expand their menu to include other dishes that may not necessarily fall under the “breakfast” category.  Thus, there are “Gulays” (organic vegetable dishes), “Pinoy Pastas” (pasta dishes with a uniquely Filipino twist), and “Grilled Pizzas” (thin crust but definitely not thin on flavor) plus different kinds of rice, salads, soups (a.k.a. “Sopas”), and desserts.  There is also the much-lauded ensaymada sandwich that is made with brioche bread and three different fillings: corned beef with onions, BLT (bacon, lettuce, and tomatoes), and the very aptly named “Eggsaymada” (ham, egg, and cheese).


The moment I stepped, I was welcomed by the usual smiling faces of their staff. I honestly didn't know that I'm gonna be dining with the chefs that day, so I didn't really dressed well. By the time I arrived there, probably pass 11 in the morning, their luncheon buffet were mulled by like 20-25 hungry employees of Makati, something that I'm quite expecting so I just look for my colleagues first and take a seat.

One good thing about this place is even though they offer luncheon and dinner buffets, people here eat FAST! Since they all have a work to back to, their only choice is to do it fast and delicious. So, you won't have to worry of not getting a decent seats. :-)

When I finally get the chance of creating my lunch, I found a few but great selection of roast chicken and pork meat, pasta, vegetable dishes, beef dish, some sausages, and the Laudicos' pride, the tapa.


They also have fresh green salad there and the ultimate and captivating Pinoy dessert section, so I keep in mine to spare some room for the desserts later.


After settling in our respective seat, Chef Jac approached out table and asked how we are doing. If you've been here in Bfast before, you would notice that Chef Jac barely talks to their customers. A self-confessed "mahiyain", she said to us, while we are enjoying our lunch then, that she always asks her husband, Chef Roland, to do the talking to their guests, since he's more popular than her. For those who didn't know yet, Chef Roland is one of the chef-judges in the famous cooking competition show, Junior Master Chef.

It was really fun talking to Chef Jac and knowing some things about their cooking styles that normal customer don't usually get. She also shared to us on how firm they are in choosing the right, healthy meal for their customers and how they stand against the use of MSG on their food.

Just before I finish my luncheon plate, Chef Roland joined our table and shared stories on how they gather their ingredients, and how they make sure that what they are getting are the best quality that they could found in the country. It was then that they asked their servers to serve us a plate of their Kitayama Wagyu Beef - another Laudico's pride.

Hails from Bukidnon, Kitayama Wagyu Beef is one of the the most delicious dishes I've tasted from the Laudicos. I had it first when I visit their Bistro Filipino restaurant, and from then on, it has been on my most delicious local dish list.

Going back, after some chat with Chef Roland, I excused myself to get a slice of their beautifully made desserts. Chef Jac is the one who's in charge on their desserts and pastries, so if you will t it, you would notice how some of them really exemplifies femininity and class. I had a piece of the three desserts that they have then - the Suman Panacotta Cake, Butter Cupcake and the Tablea Brownie.

It was my first time to see and experience Chef Jac's Suman Panacotta Cake, and it was indeed a great finisher! I really love how she managed to create something so classy out of our ordinary Filipino dessert. According to her, it was one of the desserts that her foreign colleagues liked too, so she really takes pride on this one too.

Aside from those dessert, Chef Jac also presented to us two of her new creations that also made use of our indigenous ingredients - the Quezo de Bola Cheesecake topped with Roasted Cashew Nut and the  Mango Brioche Cake .

Aside from looking so delish, both are also perfect for sharing. Just don't forget that these two are not part of the buffet set, all right? Hehe.

Lunch and Dinner Buffets (Php288.00/head) here in BFast prepared from Mondays to Thursdays at 11 a.m. to 2 p.m. and 6 p.m. to 10 p.m., respectively. The All-You-Can-Eat Merienda and Dessert Choices with a Cup of Coffee (Php188.00/head) is on every single day of the week and it starts at 3 in the afternoon til 5 p.m.  Then, for meat lovers, they also have the Wagyu Weekend Buffet (Php388.00) to boot  every Fridays at 11 a.m. to 2:30 p.m. and 6 p.m. to 10 p.m. and on Saturdays and Sundays at 9 a.m. to 2:30 p.m. and 6 p.m. to 9 p.m.

More than serving the most delicious food, the Laudicos created BFAST to share their passion for Filipino food.  They hope that with every dish that they create and serve here in BFast, Ayala Triangle Gardens, they are creating a heart-warming Filipino flavor that will captivate more Filipinos to try and have their own food. And by serving organic and fresh ingredients on their dishes, they are not just helping Filipino live a healthier life, but instead creating a stable income to our local farmers.
